Ingredients
Frozen Paratha: 5
Onion: 1 medium sized
Tomato: 1 medium sized
Capsicum: 1 small sized
Spring onions: 2 stalks
Tomato sauce/ketchup: 1 tsp
Ginger finely chopped: 2 tsp
Salt: 1 tsp
Chilli powder: 1 tsp
Turmeric powder: 1/4 tsp
Coriander powder: 1 tsp
Garam masala powder: 1 tsp
Cashew nuts: 1 tablespoon
Poppy seeds: 1 tsp
Oil: 2 tsp
Procedure
- Cut the onion into half. Chop one of the onion finely and cut the other half into large cubes
- Separate the white part from spring onions and chop them separately
- Heat 1 tsp of oil in a pan and fry the onions until it becomes translucent
- Add ginger and saute well
- Now add the tomatoes and cook until it is mushy
- Add chilli powder, coriander powder, turmeric powder, masala powder, cashew nuts,poppy seeds and salt as well
- Allow this to cool and grind it in a blender/mixie to a thick paste along with tomato ketchup
- Meanwhile toast the parathas in a tawa as we do normally
- Using kitchen scissors, cut the cooked parathas into squares
- Heat 1 tsp of oil in a pan and fry the cubed onions
- Once it turns translucent add the capsicum and white part of the spring onions and fry until it turns crispy
- Now add the ground paste and cook for 4 to 5 minutes. If it is too thick add 1 or 2 tablespoons of water
- Add the parathas and mix well.
- Garnish with green part of the spring onions
- Serve with onion raita.
